Have Yourself a Traditional Christmas Goose

It’s the final countdown for Christmas. My marker for this, of course, is when companies bombard you with their “last day for ground shipping” deadline emails.

In the midst of finishing off (or maybe starting off) your Christmas gifts perhaps you have found some time to get out to goose hunt. There are multiple species, and sub-species, of geese in North America with the Canada Goose being the most abundant… And also the best eating!

Traditionally speaking, goose is a Christmas favorite. Fans of Dickens will remember these famous lines describing the bird as a Christmas meal in A Christmas Carol: “There never was such a goose…Its tenderness and flavor, size and cheapness were the themes of universal admiration.”

Here is a great and easy recipe to get the most Dicksonian “tenderness and flavor” out of your goose meat. This recipe includes the entire goose. ~There are also great ways to prepare just a goose appetizer dish or just the goose breasts that are a little less messy and are super easy but I thought this recipe best to post for a Christmas dinner type meal.

Goose Mom’s Way 
AKA “How To Go From the Field To a Delicious Rotisserie Goose Dinner”

Main Tools Needed:
– A hatchet and friends
– Grill with rotisserie
Ingredients List:
– Plenty of olive oil, butter, S&P
– 1 quart beef stock
– 1 pint current jelly
– 1 cup orange juice

1. Kill a couple of Geese (or find and befriend an enthusiastic bird hunter)
2. Messy part: Use your best hatchet (or very sharp pruning sheers) to cut off the wings, head, and neck
where they meet the body. Best to do this outside on a tree stump, if possible.
3. Longest step: take off all the feathers (good for older kids to help with)
4. Use a meat cleaver, poultry sheers, or bigass knife to cut off the triangular part that makes up the tail area– this is how you will access the bird’s innards
5. Another messy part: reach up into the bird with your hand and take all the innards out
6. Wash inner cavity with cold water and pat dry
7. Get your grill going and put the goose on the rotisserie
8. Use a basting brush with olive oil, melted butter, S&P, and favorite spices (we really like ground thyme) on the bird as it rotates
9. Leave on the rotisserie for about 15-20 minutes (depends on your grill)
~A goose is a very lean bird (unlike a turkey) so crispy skin and very rare meat is the best combo here.
10. Remove from rotisserie to carving board and let it sit 10+ minutes
11. While the bird is resting, prepare the following sauce:
12. In a saucepan, combine beef stock, current jelly, orange juice, S&P
13. Get the mixture really boiling (rolling boil) for 10 full minutes so it reduces
14. Carve bird thinly and put slices in a dish deep enough to hold the sauce, don’t be alarmed by the rareness
15. Pour the piping hot sauce over the meat immediately (sauce will cook the meat a little more)
16. Salt more as needed

Note: If you have a willing butcher, you can skip steps 2-6 and have your butcher prep the bird for you.

Some Parting Facts:
– Goose fat is the softest in its animal category. Meaning its fat melts into liquid at a lower heat than other animals like it.
– The Middle Ages feast of Michaelmas, celebrating the winter solstice and honoring the end of the harvest, featured goose.
– The Vikings roasted goose as a harvest offering to their god’s Thor and Odin.

– To get more information about Goose hunting in your state, check out your local Division of Natural Resources’ website. As with all hunting, it is important to be well informed of your local laws and regulations.

The edges of this board are also beveled to avoid getting hung up on a feature. Big Snow Storm headed towards Wyoming, Colorado and Utah

Rocky Mountain ladies, get your snorkels out because the next couple days are going to see double digit snowfall totals. The perferct snow storm is headed towards the Wasatch Range and nearly all of Colorado, and has already landed in Wyoming’s Tetons. The snow storm  is expected to drop anywhere from the better part of a foot of snow to nearly three feet in parts of Colorado. Screen shot 2013-12-03 at 07.25.59

Nearly a foot of new snow has fallen in the Tetons especially on the West side of Teton Pass, and further north towards Yellowstone.  The Cascades are seeing moderate snow with a convergence zone setting up over Stevens Pass (Only 6 inches new as of 5 a.m. yesterday).  Warmer air has moved into Wyoming bringing snow levels up to 7,000 feet and some rain reported in the Star Valley around Jackson. Snow levels will have dropped by late Monday mornin! Grand Targhee hit 100 inches of YTD snowfall Sunday morning!

Sharp cold front will slam into Wyoming during the late AM today bringing another round of moderate snow (3-7) to theTetons and 25 degree drops in Temperatures.   Cold front makes it to theWasatch in Utah around 7AM Tuesday bringing several hours of heavy snowfall to the Wasatch under SW flow. This will favor areas like BrightonSolitude, Snowbasin and Powder Mountain.  Expect 7-9 inches during the day Tuesday and another 4-9 by Wednesday morning (Cold orographics might keep light snow falling over the Wasatch until Wednesday night). Snow totals could range in the 11-16 inch range especially in Big Cottonwood.  Surprises could be found in Park City as well as Snowbasin (SW flow).    Central and Southern Utah will get even deeper amounts!

Colorado will fare deep with the cold air to the north and some moisture tap from the south. Steamboat will fare well with the Cold Front Tuesday morning into the afternoon (4-10).  Another 5-11 could fall over Steamboat Tuesday night! Snow will migrate to central Colorado during the late afternoon Tuesday and become stationary through Wednesday. Expect 2-3 foot snow totals over the Grand Mesa, and 15-25 inches from Aspen to Crested Butte and Powderhorn.  A bullseye seems to set up over either Aspen or the Butte. Winds go from SW (Good for the Butte Tuesday night) to the North (Better for Aspen).   All mountains in Colorado will snowfall! Expect the deepest days to be up north (I-70 to Steamboat) on Tuesday afternoon and in Central Colorado on Wednesday. Southern mountains including Silverton will grab a foot or more. Wolf Creek might see 6-10. The chase might take me from Steamboat on Tuesday to Aspen or Vail on Wednesday.   Vail and Summit County will fare decent amounts primarily Tuesday PM into Wednesday (11-14). Front Range resorts near Denver (Eldora, Loveland) will see 5-11 inches by Wednesday morning. Amounts could be higher!

Made in Colorado, there is a reason the Infinity hasn’t changed much from year to year. Never Summer got it right on the first try. My motto for the Infinity is “Infinite possibilities” because it performs perfects in powder, groomers, trees, the park and steeps. Powder is suddenly effortless. The Infinity feels like it just wants to float make every face shot a joy. Though this board is a little stiff for a jib board, it has just enough pop to ollie my way through the steeps of the Highlands Bowl. And while it is a little heavier than most this is not necessarily a bad thing, sometimes you got to push the snow around, especially when there is a camera on location. And the kicker, Never Summer has a three-year warranty. This always tells you a lot about a company’s confidence in its own products. So I say bring on the slopes because I know this board will stand up to all conditions.

 

High Society Scarlet

This Colorado-made board has a lightweight wood blend core making it fun and playful for everything the mountain throws at you. For the 13-14 season High Society bumped up the carbon, giving the board just enough pop to ollie off everything from top to bottom.

The Scarlet has no problem floating through some champagne pow and enough substance under foot to take down high speeds and uneven snow. This board wants to turn underfoot, making carving a joy and its just soft enough to respond in moguls. So bring it on, the Scarlet can handle it.
